Preparing the Tomatoes

  • Dry Thoroughly: Remove the jars and lids and dry each with a clean dryer to final the sterilization..

Canning Process

  1. Pack the Jars:
    • Place the prepared tomatoes into the sterilized jars, ensuring there is only about an inch of space between the tomatoes and the top of the jar.
  2. Add Liquid:
    • For the tomato juice, pour boiling water or tomato juice into the jars so that it gets up to about 1 inch on the top of the jar.
  3. Remove Air Bubbles:
    • Use a non-metallic utensil to remove any air bubbles trapped in the jars.

    • Put the filled jars into a water bath canner; however, please ensure that the jars float at least an inch of water.  
  6. Remove and Cool:
    • Carefully remove the jars from the canner and place them on a towel-lined counter to cool undisturbed.  
  7. Check Seals:
    • Once the jars have cooled completely, press down on the center of the lid. If it doesn’t flex, the jar is sealed properly.  

Storing Canned Tomatoes

  • Store in a Cool, Dark Place: Keep the canned tomatoes in a cool, dark place like a pantry or basement.  
  • Check for Spoilage: Before using the canned tomatoes, inspect the jars for any signs of damage or spoilage, such as bulging lids or mold.
